Allegiance Wines Unity Yarra Valley Chardonnay 2017Cox Wine Merchants
Notes de dégustation de la cave de vigneron Whole bunch pressed. Cold settled for two days with no enzymes. Racked with some solids to 500L French Oak puncheon barrels â 12% new and the remainder neutral, then left alone to ferment naturally. Fermented in a cool cellar over a period of 6 weeks, with some stirring every few days towards the end of ferment and for a further 4 weeks post ferment before adding SO2 and prior to the commencement of malolactic fermentation. Matured on gross lees in puncheon for 10 months, then racked to tank. Tight, long and refreshingly tart, yet with the generous flow and drive of juicy stone fruit and citrus. Floral, nutty and creamy in texture the palate is underpinned by purity and minerality. Light, nimble, textural and full of varietal flavour. Cellar potential of 4-6 years.
