Wine making process
Fermented in stainless steel tanks for 21 days at a low temperature
(15ºC). Aged on the fine lees in french oak barrels.
Cold maceration (6ºC) for 12 hours.
Fermentation in french oak barrels for 6 months.

Wine made from the best plots and vineyards of VERDEJO grape variety.
Tres Pilares - Three pillars, because of the three brothers that are
members of the winery - is a personal wine, fruit of the tradition of
vine-growing in the Fernandez family. The wine is produced with grapes
coming from the 30-year old vineyards, planted on the Castilian plateau
in pebbles, sand and limestone soils.
White wine, very clean and bright. Straw yellow with greenish hints.
Medium-high intensity. To the nose, it has a range of quite complex
and structured aromas: citrus and tropical fruits aromas, sweet spices,
slighty smooky and with a hint of wood, and a mineral background that
highlights subtle and complex traces.
Very well structured, well balanced between fruit and wood and good
acidity which lengthens the lingering after taste. Creamy with aniseed
flavours, typical of Verdejo variety. In the after taste, the original
mineral and citrus flavours reappear.

Matches perfectly with fish, seafood, white meats, cheese and rices.
