Wine production:Hand picking into small crates, manual
selection in vineyard and cellar,
stemming soft pressing, static must
racking, fermentation under controlled
temperature, inerting, stabilization and
microfiltering process.
Tasting notes:
Clean and bright. Straw yellow colour
with shades of green. Strong varietal
aromas, with overtones of white fruit,
(pear and apple), citrus fruit (grapefruit)
together with characteristic vegetal
and herbaceous hints (fennel). Fresh
in mouth, balanced, persistent
aromatic finish, with varietal overtones,
well structured.
Grape varieties:
Hondarrabi Zuri 55%.
Petit Courbu 30%.
Gros Manseng 15%.
Recommendations:
Serve chilled in a glass, at around 6º-
8º, perfect for pairing with light rice
dishes and char-grilled fish. Ideal
cheeses for long after-dinner pairings
include Edam and Gouda.
